Curried Chicken Salad, from Red Mountain Resort
Whip this up the night before your morning 18, and you can come home to a delicious, nutritious treat. It's slightly adapted, after a few tries at home, from Inspired Eating, a Red Mountain Resort cookbook.

- 1 pound chicken or turkey breast, boneless, skinless, cooked, shredded Even canned is OK
- ¼ cup celery, chopped
- 3 tbsp red onion, finely diced
- 4 tsp unsalted sliced almonds Toast if you have time
- ½ cup red grapes, halved Raisins/Craisins also work well
- ⅓ cup mayonnaise
- ¼ cup plain yogurt
- 1½ tsp yellow curry powder
- ¼ tsp ground turmeric
- 2 tsp apple cider vinegar Try not to forget this
Combine the chicken, celery, onion, sliced almonds and grapes in a large bowl.
In a separate mixing bowl, combine the mayo, yogurt, curry powder and turmeric. Add a sprinkle of salt, mix well, and let stand for at least an hour.
Combine all ingredients, stirring in the apple cider vinegar, and serve atop lettuce, or alongside pitas or a grainy bread.
