Curried Chicken Salad, from Red Mountain Resort

Whip this up the night before your morning 18, and you can come home to a delicious, nutritious treat. It's slightly adapted, after a few tries at home, from Inspired Eating, a Red Mountain Resort cookbook.

Ingredients
  

  • 1 pound chicken or turkey breast, boneless, skinless, cooked, shredded Even canned is OK
  • ¼ cup celery, chopped
  • 3 tbsp red onion, finely diced
  • 4 tsp unsalted sliced almonds Toast if you have time
  • ½ cup red grapes, halved Raisins/Craisins also work well
  • cup mayonnaise
  • ¼ cup plain yogurt
  • tsp yellow curry powder
  • ¼ tsp ground turmeric
  • 2 tsp apple cider vinegar Try not to forget this

Instructions
 

  • Combine the chicken, celery, onion, sliced almonds and grapes in a large bowl.
  • In a separate mixing bowl, combine the mayo, yogurt, curry powder and turmeric. Add a sprinkle of salt, mix well, and let stand for at least an hour.
  • Combine all ingredients, stirring in the apple cider vinegar, and serve atop lettuce, or alongside pitas or a grainy bread.
